How To Grill Kebab

Traditional way without using the grilling grate:

Remove the grill grate or use a skewer holder set to prevent any contact between the grate and the kebab meat.

Place the skewers on the edges of the BBQ or on the holder set and turn the skewers 180 degree every 7-8 seconds for first 2 minutes. By this way the meat will not fall off the skewer.

After that start turning the skewers 90 degree every 2 minutes until all sides are well cooked.

Kebabs will be done when they feel spongy or dry and like a brown colour. It takes approximately 12 - 15 minutes.

By using the grilling grate:

Preheat the grate for 5 minutes and then brush it with olive oil.

Place the kebab skewers directly on the grate and wait for 4-5 minutes until the meat turns dark, then turn the skewers 180 degree and wait another 4-5 minutes.

After that start turning the skewers 90 degree until all sides are well cooked.

Kebabs will be done when they feel spongy or dry and like a brown colour. It takes approximately 12 - 15 minutes.


Turkish Adana Kebab

Ingredients:

1 kg ground fatty lamb or beef (or mix).

1/2 medium white onion, minced.

3 large garlic cloves, minced.

1 tbsp finely chopped Italian parsley.

1-1/2 tsp salt.

1/2 tsp black pepper.

2 tsp seven spices.

1-1/2 tsp ground cumin.

1 tsp ground sumac.

1 red bell pepper, minced.

1 tsp Turkish red pepper paste (Optional).

Directions:

Drain the water (juice) out of minced onion and parsley very well before adding to the meat.

Mix the meat, onion, garlic, pepper, and parsley and then add all species and mix them very well in large bowl.

Cover the bowl and leave it in the fridge for at least 30 minutes.

Then divide the meat into 8-10 portions and use Yes Way Kebab maker with a flat skewer to form a traditional kebab shape.

Syrian Kebab

1 tsp salt.

1/2 tsp black pepper.

1/2 cup fresh chopped parsley (Optional).

Syrian Shish Minced Kebab

Ingredients:

1 kg ground chicken.

1 tbsp. chicken spice.

1 tsp salt.

1 tsp curry.

1 tsp onion powder.

1 tsp garlic powder.

1 tsp ground ginger.

1 tbsp. Turkish red pepper paste (Optional).

Directions:

Mix all ingredients very well in large bowl.

Cover the bowl and leave it in the fridge for at least 30 minutes.
